YES… its true… there is just a little twist to it !! =p
This isnt possible in the ‘original’ GTalk… You have to get GTalk – Labs Edition (click here for direct download link to the exe)… here are some screenshots…

Now you can appear offline in GMail chat !! Also a short note on Google Chatback
